Was growing like a weeds just days after I planted it. I’ll have to ‘sucker’ some of the leaves soon I think.

You can corner the market on fresh horseradish and run the wasabi wannabe’s out of town.
I have never researched how to grow it but since the roots are what your after I would think that the more leaves the better.
Hope you put tons of peat moss around it so it is easy to dig and clean.
If you can get another starting from those plants I would suggest trying to grow it mainly hydrophonically or is that hydroponic… That would make it very easy to harvest the roots.
